Heat oil in a frying pan over medium-high heat. Add onion. Cook, stirring, for 2 minutes or until softened. Add celery and garlic. Cook, stirring, for 3 minutes or until heated through. Add 1/3 cup walnuts. Cook for 1 minute.

Meanwhile, combine mayonnaise and mustard in a large bowl. Add apple. Stir to combine.

Combine celery mixture and mayonnaise mixture. Top with cheese and remaining walnuts. Serve.
You can serve this salad with pork chops, grilled chicken or on its own.
