Place the oil, grapefruit juice, chives, mustard, vinegar and honey in a glass jar. Season with salt and pepper, seal the jar and shake to combine.
This vinaigrette will keep for up to 2 days in the fridge. You will need 1 medium (about 475g) grapefruit for this recipe. Serve tossed through your favourite salad.
