To make the dressing, mix all the dressing ingredients together with 2 teaspoons water until smooth and well combined. Set aside.

Spray the asparagus with the olive oil. Spray both sides of the bread.

Preheat a chargrill pan over a high heat. Chargrill the bread for about 30 seconds each side or until golden. Rub the toasted bread lightly with the garlic.

Chargrill the asparagus for 1-2 minutes or until bright green and just tender.

Divide the toast among serving plates and top with the smoked salmon, asparagus and drizzle over the dressing.
Asparagus is a great meal accompaniment. Steam or boil, and serve drizzled with a little extra virgin olive oil, season with pepper and scatter with shaved parmesan. Italian crusty bread: Look for the Vieto Bakery brand in Woolworths or cut a Vienna-style loaf diagonally into slices long enough to hold the length of the asparagus. Smoked salmon: Rich in omega-3 fatty acids which protect against heart disease, inflammatory conditions such as rheumatoid arthritis and helps improve mood. Reduced-fat yoghurt: A great alternative to butter and eggs for making creamy dressings. Use in place of mayonnaise by adding some lemon juice and a little mustard together with your favourite chopped herb.
