Preheat oven to 200°C. Combine the plums, vanilla bean and sugar in a large bowl. Arrange in single layer in a 6 cup (1.5 litre) baking dish. Pour over the wine. Bake for 25 minutes or until tender and golden.

To make the basil mascarpone, use a balloon whisk to whisk the mascarpone, sugar and basil until smooth - do not over beat.
- Step 3
Divide the plums among serving dishes and serve with the basil mascarpone.
Tip: For a non-alcoholic alternative, try apple juice instead of white wine.
