Tomato and ricotta wholemeal spaghetti

    • Method
    1. Step 1

      Cook the spaghetti in a large saucepan of boiling water according to packet instructions. Drain and return to the saucepan.

    2. Step 2

      Add the parsley, tomatoes, olives, olive oil and lemon juice. Toss until well combined.

    3. Step 3

      Divide among serving dishes. Crumble over the ricotta and sprinkle with the lemon rind. Season with pepper to serve.
