Combine soy sauce, garlic and rosemary (if using) in a large container suitable for marinating.

'Bash' cutlets flat with meat mallet. Place cutlets in soy sauce mixture and marinate in the fridge at least 30 minutes or longer.

Preheat oven to 160C. Prepare oven trays by placing a sheet of baking paper to cover.

Meanwhile, combine egg and milk in a small bowl, stir lightly with a fork. Leave aside.

Place flour in on a plate or in a bowl. Leave aside.

Place breadcrumbs on a different plate or in a bowl. Leave aside.

Remove cutlets from fridge and coat each one completely in the flour. After flouring, place each one in the egg mixture followed directly by placing straight into the crumbs. Cover completely with the crumbs.

Place the cutlets on the prepared trays and bake for 30 minutes, turning them halfway.
