Strawberry & mascarpone wafers

      Place strawberries, caster sugar and vanilla in a saucepan over medium-high heat and cook, stirring, for 1-2 minutes until the sugar has melted and the strawberries have just started to soften - don't overcook them, they still need to be firm. Whisk together the mascarpone, cream and icing sugar. Place half the biscuits on serving plates, top each with a dollop of the mascarpone cream, followed by some of the strawberries, reserving any juices. Top with the remaining biscuits and drizzle with the berry juices.
