Steamed greens with tarragon mustard dressing

    1. Step 1

      Make dressing Whisk mustard, lemon juice and oil together in a bowl. Season with salt and pepper. Stir in tarragon.

    2. Step 2

      Bring a large saucepan of water to the boil over high heat. Add broccolini, asparagus and beans. Cook for 2 to 3 minutes or until almost tender. Add snow peas. Cook for 1 minute or until vegetables are tender. Drain.

    3. Step 3

      Arrange vegetables on a platter. Drizzle with dressing. Sprinkle with mint. Serve.

    Drizzle with dressing just before serving, as lemon juice discolours green vegetables.

    Super saver: Use 1 1/4 cups frozen peas instead of snow peas and save around $1.92 in total
