- Step 1
Make dressing Whisk mustard, lemon juice and oil together in a bowl. Season with salt and pepper. Stir in tarragon.

Bring a large saucepan of water to the boil over high heat. Add broccolini, asparagus and beans. Cook for 2 to 3 minutes or until almost tender. Add snow peas. Cook for 1 minute or until vegetables are tender. Drain.
- Step 3
Arrange vegetables on a platter. Drizzle with dressing. Sprinkle with mint. Serve.
Drizzle with dressing just before serving, as lemon juice discolours green vegetables.
