Spinach with burghul

    1. Step 1

      Heat the oil in a large saucepan over medium heat. Add the onions and cook, uncovered, stirring occasionally, for 2 minutes. Add the burghul and cook, stirring, for a further 2 minutes or until the onions are soft.

    2. Step 2

      Meanwhile, roughly chop spinach leaves and stems, add to pan with pepper and allspice, and stir to combine. Season with salt. Cook over medium heat, covered, for 3 minutes or until spinach wilts. Serve immediately.

    The spinach can be prepared up to 3 hours ahead. Finish making just before serving the main.
