Spinach & blue cheese salad with walnut dressing

    1. Step 1

      Preheat oven to 180°C. Spread the walnuts on a baking tray. Cook in preheated oven for 5-8 minutes or until aromatic and toasted. Roughly chop.

    2. Step 2

      Combine the walnuts, oil and vinegar in a small screw-top jar. Shake well to combine. Taste and season with salt and pepper.

    3. Step 3

      Place spinach, tomatoes and blue cheese in a large bowl. Drizzle with walnut dressing and toss gently to combine. Serve immediately.

    Microwave tip: Place walnuts in an oven bag and twist the opening to close. Cook on High/800 watts/100%, gently shaking the bag every minute, for 2-4 minutes or until toasted.
