Cut onion into 8 wedges. Cut all remaining vegetables into 3cm pieces. Place all vegetables into a baking dish.

Make marinade: Combine all spices in a bowl. Add oil. Stir until well combined.

Add marinade and salt to vegetables. Toss to coat. Roast for 1 1/2 hours, turning occasionally, or until golden and tender.

Serve with fish and lemon wedges.
