Scallops with Japanese cucumber dressing

    1. Step 1

      To make the dressing, combine the soy, vinegar, mirin and sesame oil in a small bowl and set aside.

    2. Step 2

      In a separate small bowl, combine the qukes, green onion and ginger and set aside.

    3. Step 3

      Heat the peanut oil in a medium frying pan over high heat. Add half the scallops and cook for 30 seconds to 1 minute each side or until golden and cooked as desired. Transfer to a plate. Repeat with remaining scallops.

    4. Step 4

      Place the scallops on their shells and place on a serving platter. Top each scallop with a little of the cucumber mixture and drizzle with the dressing
