Saute the onions and garlic in the butter. Add the rice and stir in well. Add the evaporated milk and chicken stock.

Add the chopped pumpkin. Bring to boil and then simmer for 20 to 30 minutes.

Add mushrooms and spring onions about 10 minutes before the liquid has been absorbed. Add pepper and salt to taste.
