Potato and corn salad

    1. Step 1

      Place potato, gherkin, onion, capers, egg, corn and half the parsley in a large bowl. Add dressing. Season with salt and pepper. Toss gently to combine. Serve topped with remaining parsley.

    You could use chopped fresh chives instead of parsley.

    Serve with: Sausages, grilled firm white fish or salmon or barbecued chicken.
