Place the coconut on a plate. Rub the rim of each serving glass with the lime wedge. Dip the rim of each prepared glass in the coconut.

Place the Malibu, pineapple juice and lime juice in a cocktail shaker. Add the crushed ice and shake to combine.

Strain the Malibu mixture into the prepared glasses. Spoon the passionfruit pulp evenly among the glasses. Serve with the Mango salsa canape cups with prawns & coriander (see related recipe).

You will need about 4 passionfruit for this recipe. Make this recipe just before serving. Variation: To turn this cocktail into a mocktail, replace the Malibu with 125ml (1/2 cup) chilled pineapple juice.
