Peanut butter and pecan biscuits

    1. Step 1

      Preheat oven to 180C. Lightly grease 2 baking trays and line with baking paper.

    2. Step 2

      In a large bowl, beat together the butter and peanut butter. Beat in the sugar, egg and vanilla until light and fluffy. Fold the flour and pecans through.

    3. Step 3

      Roll level tablespoonfuls of the mixture into balls. Place onto prepared trays, 4cm apart. Flatten slightly.

    4. Step 4

      Bake for 12-15 mins or until golden. Let cool for 5 mins on the trays before transferring to a wire rack to cool completely. Store in an airtight container.

    You could use peanuts, walnuts, macadamias, hazelnuts or brazil nuts instead of pecans, if you prefer.
