    1. Step 1

      Pre-heat oven to 180C

    2. Step 2

      Beat butter and sugar well until creamy. Add eggs, beat well. Add flour.

    3. Step 3

      Bake in gem irons, putting 1 teaspoon of mixture in each for 12-15 minutes. Set aside to cool.

    4. Step 4

      Meanwhile, make filling: Beat sugar and butter until fluffy and pale. Add milk slowly.

    5. Step 5

      Cut the mini cakes in half. Cut out the centre of the flat part of each small cake and dollop a little filling into the hollows. Replace the matching half on top to create balls.

    6. Step 6

      Combine the coconut with the food colouring to turn it pink.

    7. Step 7

      Roll the cake balls in the mock cream and then in the pink coconut.
