- Step 1
Make chutney. Heat oil in a saucepan over medium heat. Add mustard seeds. Cook for 1 minute or until seeds pop. Add onion. Cook for 3 minutes, stirring, or until soft. Add tomatoes, garlic, sugar and vinegar. Cook, stirring, until sugar has dissolved. Increase heat to high. Bring to the boil. Reduce heat to medium. Simmer, uncovered, for 20 minutes, stirring occasionally, or until chutney thickens.

Heat a frying pan over medium heat. Cook sausages for 6 minutes, turning, or until cooked through. Remove to a plate. Cover.
- Step 3
Add oil to frying pan. Whisk eggs, cream and pepper in a bowl. Add one-quarter of egg mixture to pan. Swirl to form a thin omelette. Cook for 2 minutes or until set. Remove from pan. Repeat 3 times with remaining egg mixture. Spread omelettes with chutney. Top with sausages. Roll up. Cut in half. Serve with rocket and toast.
