Preheat oven to 180°C. Lightly brush a baking tray with oil to grease. Place the canape cups on the prepared tray.

For a pretty touch, lay the table with beautiful place settings. Make it ahead: Prepare this recipe to the end of step 2 up to 1 day ahead. Cover with plastic wrap and store in the fridge. Preheat oven and continue from step 3, 5 minutes before serving. Budget tip: Buy chargrilled eggplant from the deli section at Woolworths. To make your own, preheat a chargrill on high. Thinly slice an eggplant lengthways and brush both sides with olive oil. Cook on grill for 5 minutes each side until charred and tender.
