Oaty apple muffins

    1. Step 1

      Preheat oven to 180C or 160C (fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper cases.

    2. Step 2

      Combine flour, sugar, chia seeds and ginger in a large bowl. Make a well in the centre. Whisk milk, egg and oil in a jug. Pour the milk mixture into the well. Stir until just combined. Stir in the apple (don’t overmix).

    3. Step 3

      Divide among cases. Sprinkle with oats, pumpkin seeds and cinnamon. Bake for 20-25 minutes or until a skewer inserted in centres comes out clean. Cool on a wire rack.

    Wrap cooled muffins in plastic wrap and foil and freeze for up to 1 month. Reheat in microwave on medium, if desired.
