Preheat oven to 200°C. Line 2 large baking trays with baking paper.

Place kumara into a saucepan. Cover with water. Bring to the boil over medium heat. Cook for 7 minutes or until tender. Drain. Set aside to cool.

Heat oil in a frying pan over medium heat. Add leek. Cook for 2 minutes or until soft. Set aside to cool.
- Step 4
Combine kumara, leek, cheeses, basil, cumin, and salt and pepper.
- Step 5
Spoon 1/2 cup of filling onto 1 half of each piece of pastry. Fold pastry over filling. Press edges together to seal. Place onto baking trays. Brush with egg. Bake for 10 minutes or until golden. Serve.
