- Step 1
Combine flour, yeast and sea salt in a large bowl. Make a well in the centre. Pour in water and 1 tablespoon of oil. Mix to form a sticky dough.

Turn dough onto workbench. Grease your hands using 1 tablespoon of the remaining oil. Knead dough for 5 minutes or until it springs back when pressed. Place in a large bowl. Cover with plastic wrap. Set aside in a warm place for 1 hour or until doubled in size.

Preheat oven to 220°C. Using your fist, punch dough down. Cut into 8 even pieces. Stretch each piece into a 1cm-thick oval base. Place pizza bases on 2 baking trays.

Using a slicer or mandolin, thinly slice potatoes. Pat dry with paper towel. Place potato slices, in a single layer, overlapping slightly, over pizza bases. Sprinkle with thyme. Season with salt and cracked black pepper. Drizzle pizzas with remaining 2 tablespoons of oil. Bake for 15 to 20 minutes or until bases are crisp and golden. Serve.
