- Step 1
Preheat oven to 180°C. Rub 40g butter, chilled, cubed, into 1/2 cup (75g) plain flour until crumbs form. Stir in 80g pine nuts, 1/3 cup (35g) rolled oats, 2 tablespoons brown sugar, 1 teaspoon grated lemon rind and 1/2 teaspoon ground cinnamon.

Remove cores from 8 royal gala or pink lady apples. Use knife to score around the centre of the apple. Press the crumble mixture into the centre of the apples and place them in a baking dish.
- Step 3
Sprinkle extra crumble mixture over tops of apples. Drizzle with 1/4 cup (60ml) honey. Bake for 20-25 minutes. Drizzle with extra honey to serve. Serve with double cream or ice cream.
