Ham and pineapple salad wraps

    1. Step 1

      Combine the ham, pineapple, capsicum, snow pea sprouts, cucumber and cashews in a large bowl.

    2. Step 2

      Divide the salad mixture among the lettuce leaves and wrap up to enclose the filling.

    Make it ahead: Prepare to the end of step 1 up to 2 hours ahead. Cover with plastic wrap and store in the fridge. Picnic tip: To transport this dish, prepare to the end of step 1. Place the salad and lettuce leaves in separate airtight containers and store in an esky. Continue from step 2 to serve.
