Fillet mignon with mushroom sauce

    1. Step 1

      Wrap the bacon around the steaks and secure with toothpicks.

    2. Step 2

      Heat a heavy-based pan and add the oil. Sear steaks and cook for 8-10 minutes. Keep warm on a plate covered with foil.

    3. Step 3

      Add the butter to the pan with the garlic, mushrooms and spring onions, cook for 1 minute. Add remaining ingredients and simmer over a low heat until reduced.

    4. Step 4

      Spoon sauce over steaks and serve with seasonal veggies.
