Combine eggs, flour, milk and baking powder in a bowl. Add spinach, mint and feta. Stir until well combined.

Pour oil into a large non-stick frying pan until it is one-third full. Heat over medium heat until hot. Add heaped tablespoonfuls of fritter mixture, 2 at a time. Spread with back of a spoon to form 9cm (diameter) rounds. Cook for 2 minutes, or until golden. Turn and cook for a further 1 minute, or until cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining fritter mixture.

Place 1 fritter onto each serving plate. Top with sour cream and smoked salmon. Repeat, finishing with a fritter. Season with salt and pepper. Serve with lemon wedges, if desired.
