Edamame bean and prosciutto salad

    1. Step 1

      Cook beans in a pan of salted boiling water for 2 minutes. Drain, then refresh in cold water. Fry prosciutto in a non-stick frypan over medium heat, stirring, until crisp. To serve, combine beans and prosciutto with garlic, soy and oil.

    * Edamame are Japanese fresh green soybeans from Asian food shops.
