Using a vegetable peeler, peel cucumbers into ribbons. Place lettuce, cucumber, parsley, mint, coriander, eschalot and radish in a bowl. Toss gently to combine. Top with avocado.

Place mustard, garlic, vinegar and oil in a jug. Whisk to combine. Serve salad with dressing.
