- Step 1
Grease a 6-cup (1.5L) baking dish. Preheat oven to 200C.

Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Cook for 15 mins or until tender. Drain. Return to pan.

Using a potato masher, mash potatoes until smooth. Add butter, cream and nutmeg. Mash to combine. Gradually stir in milk. Add parsley and stir to combine. Season.
- Step 4
Spoon potatoes into prepared baking dish. Top with cheddar and parmesan. Bake for 25-30 mins or until golden. Serve sprinkled with extra parsley.
Serves 6 as a side.
