    • Method
    1. Step 1

      Heat butter and olive oil in a large saucepan over medium-high heat. Add leeks. Cook, stirring, for 5 minutes or until softened.

    2. Step 2

      Add chicken stock, water, chicken and thyme. Simmer, partially covered, for 45 minutes. Remove chicken and chop flesh. Discard bones.

    3. Step 3

      Add pearl barley. Simmer for 45 minutes or until barley is cooked.

    4. Step 4

      Add the chopped chicken, 5 prunes and parsley. Season. Sprinkle with extra prunes.
