- Step 1
Pre-heat oven to 180°C.
- Step 2
Season chicken pieces and brown in batches in oil just until lightly browned. Place in casserole.

Cook onions and celery for 8-10 minutes until softened.

Add garlic, thyme leaves and bay leaves. Add white wine and Dijon mustard and bring back to boil. Stir well to combine. Pour over the chicken.
- Step 5
Cover with a lid and bake for 40 minutes.
- Step 6
Thicken with 1 tbsp cornflour mixed with 2 tbsp port and adjust seasonings to taste.
Variation: Mediterranean Chicken Casserole – Make the sauce with 2 sliced onions, 3 cloves crushed garlic, 2 sliced green peppers, 2 x 400g cans of tomatoes in juice, 1 cup white wine and 1⁄2 cup black olives.
