- Step 1
Cook celeriac in a large saucepan of simmering water for 20-25 minutes or until tender. Drain. Transfer to a food processor and process until smooth.

Place cream and butter in a saucepan over medium heat. Bring just to the boil. Add cream mixture and parmesan to celeriac and process until smooth.

Transfer to a serving bowl. Drizzle with oil and season with pepper.
