Carrot & zucchini muffins

    • Method
    1. Step 1

      Preheat oven to 180C.

    2. Step 2

      Sift flour, sugar, soda and cinnamon into basin. Mix in carrot, zucchini and pecans.

    3. Step 3

      Make well in centre of dry ingredients. Add lightly beaten eggs, milk and butter, mix well until ingredients are just combined. Pour mixture into muffin tins.

    4. Step 4

      Bake in oven for (approx) 20 minutes.
