Preheat oven to 220°C. Lightly grease a large square or round baking tray. Place the onions, olive oil and thyme sprig in a large frying pan. Cover and cook over a medium heat, stirring often, for 15 minutes or until soft and light golden. Uncover and cook for 3 minutes or until the onion is golden brown. Remove the thyme sprig.

Meanwhile, place the pizza base on the greased baking tray. Brush the base with a little olive oil. Bake the base for 10 minutes.

Cut each bocconcini into four slices. Arrange the bocconcini over the pizza base. Scatter the onion evenly over the bocconcini. Bake for 10 minutes or until the bocconcini has melted. Sprinkle with thyme leaves and season with salt and pepper. Serve immediately.

Bocconcini: Fresh small Italian mozzarella balls sold in a water or brine solution. They are traditionally made from buffalo milk but nowadays are more commonly made from cow's milk.
