- Step 1
Preheat oven to 180°C. Brush four 160ml (2/3-cup) ovenproof dishes with butter to grease.

Use electric beaters on low speed to beat the brown sugar, butter, egg, plain flour, self-raising flour and vanilla essence in a small bowl until combined. Increase speed to medium and beat for 2 minutes or until pale and smooth.
- Step 3
Spoon mixture into greased dishes. Smooth the surface of each with the back of the spoon and sprinkle with white sugar. Bake in preheated oven for 18-20 minutes or until a skewer inserted in centres of puddings comes out clean. Serve immediately, topped with a scoop of ice-cream.
These puddings can also be made in four 160ml (2/3-cup) ovenproof cups.
