Caramel bananas with waffles

Ingredients
  • 40g unsalted butter
  • 1/2 cup (100g) brown sugar
  • 4 ladyfinger bananas, peeled, sliced
  • 100ml cream
  • 1/2 teaspoon vanilla extract
  • 4 waffles
  • Vanilla ice cream, to serve
  • 75g pkt pecans, chopped

    1. Step 1

      Stir 10g of the butter and 2 tablespoons of the brown sugar in a frying pan over a low heat. Add the banana and cook, turning for 2-3 minutes or until golden. Set aside.

    2. Step 2

      Add the cream and remaining sugar and butter to the pan and stir over low heat until melted. Simmer for 5-10 minutes or until thickens. Remove from heat and stir in vanilla extract. Set aside.

    3. Step 3

      Toast the waffles. Top with the ice cream, bananas and caramel sauce. Sprinkle with pecans to serve.
