Melt the butter in a medium to large pot over a medium heat. Add the cabbage, currants, sugar and salt and pepper and stir-fry over a medium heat for 10 minutes until the cabbage is wilted and tender.
- Step 2
Mix in the vinegar and adjust the seasonings to taste. Serve immediately or refrigerate and reheat when needed.
Annabel's Tip: Never blanch or cook red cabbage in boiling water as you lose the fabulous bright colour. This slightly sweet and sour recipe for red cabbage goes brilliantly with pork dishes.
