Berries with toffeed yoghurt

    1. Step 1

      Make toffee syrup Place sugar in a heavy-based frying pan over medium-low heat. Cook, tilting pan back and forth and stirring with a metal spoon for 8 minutes or until sugar dissolves and turns golden.

    2. Step 2

      Meanwhile, combine berries in a shallow serving dish. Dollop yoghurt over berries. Drizzle with hot toffee syrup. Serve

    Thickening yoghurt: Yoghurt can be thickened further by removing excess moisture. Spoon yoghurt into a fine mesh sieve. Cover sieve and place over a bowl. Refrigerate for 3 hours. Yoghurt will have the consistency of double cream.

    Low FODMAP diet tip: If you are lactose intolerant, there is too much yoghurt used in this recipe. Therefore reduce to 2 Tbsp per person, or you can replace with lactose free yoghurt (inulin free) if you wish, and keep serving size the same.
