To make the sauce, stir all the ingredients in a small bowl until the sugar dissolves.

Heat the oil in a wok or large frying pan over high heat. Stir-fry the beef for 2-3 mins. Transfer to a bowl. Add onion to wok and stir-fry for 2-3 mins or until brown. Add garlic and cook for 30 secs or until fragrant.

Return the beef to the wok. Add the bamboo shoots, bok choy and chopped coriander. Stir-fry for 30 secs. Add the sauce and bring to the boil. Spoon the stir-fry into bowls and top with coriander sprigs. Serve with steamed rice.
