Baked butterscotch custard

    1. Step 1

      Preheat oven to 150°C. Heat the cream in a saucepan over a medium heat until hot but not boiling. Remove from the heat.

      Meanwhile, place the eggs, egg yolks and sugar in a heatproof bowl. Whisk until well combined.

    3. Step 3

      Slowly add the hot cream to the egg mixture, whisking to combine. Whisk in the butterscotch schnapps.

      Place 6 x 3/4 cup (185ml) ovenproof cups or dishes in a baking dish. Place four squares of chocolate in each cup. Divide the cream mixture among the cups. Fill the baking dish with enough hot water to come half-way up the sides of the dishes. Bake for 40 minutes or until set and firm to a light touch. Set aside for 20 minutes. Serve dusted with icing sugar.
