Preheat oven to 180C. Line a 12-hole muffin pan with paper patty cases.

Sift flour, cinnamon into a large bowl. Stir in sugar, apple and pecans. In a jug, whisk together milk, butter and egg.

Make a well in the centre of the dry ingredients. Add milk mixture all at once. Mix lightly until just combined. Do not over-mix.

Spoon mixture evenly into cases until 2/3 full. Sprinkle evenly with extra chopped pecans.

Bake for 20-25 mins until cooked when tested. Allow to cool in pan for 5 mins before transferring to a wire rack to cool completely. Store in an airtight container.
They freeze well. Thaw at room temperature and heat in microwave on high (100%) for 15 seconds each, to give them that just-baked flavour.
